Kathy?s shortbread
She got it from her mum who I understand got it from her mum, who… You know what I mean! They made a lovely sweet something to have with our cup of tea at the end of such a big meal and they looked the part when she handed them out to all the guests as a little present to take home. She was happy to share the recipe and we both hope you enjoy them as much as we did this festive season! Kathy’s shortbread
225g plain flour 1 pinch salt 115g rice flour 115g caster sugar 225g butter Sieve both flours and the sugar into a bowl.Rub in the butter and knead until a smooth paste forms. Turn into a plain floured surface and roll to approximately 1cm thick. Cut into the desired shape and place on a cold and greased oven tray. Cook in a slow oven for 45 minutes to an hour. Enjoy with tea, a glass of milk or hand out to friends and family! Happy Holidays everyone!
