Maharashtrian Pav-Bhaji
Pav bhaji is a very popular maharashtrian fast food. Pav means bread and bhaji means sabji or curry. It is very nutritious and easy to prepare. Large size peeled and chopped potatoes 2 (gives 3 cups) chopped capsicum 1 Chopped cauliflower 1 cup Fresh green peas 1 cup Chopped coriander leaves Readymade pavbhaji powder(Everest or MDH pav bhaji powder) 4 tsp. Chilli powder : 4 tsp 1/2 tsp turmeric powder 1/4 tsp garam masala powder 1/4 tsp coriander and cumin powder Green chilli 4-5 pieces Tomato puree 2 cups oil butter salt to taste. For the masala paste: Finally chopped onion : 2 Garlic 8 cloves Ginger 2 inch Fry onion till it turns to soft. Add garlic and ginger. Grind them into a very fine paste. Method : Combine together the potatoes, cauliflower, capsicum and green peas along with the water. Pressure cook till they become very soft . Mash them well and keep aside. Heat oil in a heavy bottom vessel, add green chillies, the masala paste, chilli powder,turmeric powder, pav bhaji powder, garam masala powder,coriander-cumin powder and tomato puree. Fry on a medium flame till the paste leaves oil. now add mashed vagetables, salt and one cup water for the smooth consistency. bring it to boil. Garnish with coriender leaves and butter. Serve hot with pav. For the pav: Slit the pav and apply butter on both side..roast it for a while and serve hot with the bhaji along with the chopped onion and sliced lemon. related searches : Maharashtrian
