My Friday

Today was my Friday!  Woohoo!  I have to take care of some things with my grandparents in Green Cove tomorrow, and decided to just stay the weekend.  I've had an interesting Thursday to say the least.  It started out with no breakfast.  At least not at my normal time.  I needed to get some lab work done, but was told I had to be fasting in order to have my blood drawn.  Fasting isn't really in my lexicon.  Needless to say, I woke up this morning, ran 3 miles, threw on some makeup and sped to the hospital in order to get poked with the needle.  As soon as it was over with, I hightailed back home for coffee and breakfast.  I made my breakfast last night so I could just grab it this morning as I was short on time.  Overnight oats:





1/2 cup rolled oats1/2 cup lowfat plain organic kefir1/2 cup almond milk1 tsp chia seeds1 tsp macaBananaApricot (fresh, not dried!)
Work was work.  Lunch was what I was craving: a snack plate.


BroccoliCauliflowerGrape tomatoesRed pepperKashi crackersHummus1/2 cup ricotta cheese
Afternoon snackage eaten around dinner time:


Cantalouie (Shannon-speak for cantaloupe) with plain greek yogurt

And finally a late dinner:


Sunshine veggie burger (southwest flavor)Southwest spicy mustardOrganic ketchupBanana peppersJalapeño peppersEarthgrains sandwich thinKale chips (seasoned with homemade fajita seasoning)
Hooray for today being another 3 day weekend!  Should be tons of fun :)
