Pudhina / Mint Thokku
This is one of my mom's recipes which is my all time favorite. Whenever she makes this thokku i will happily have this with all possible dishes ranging from rice, idli, dosa, chapathi, a few to mention. The flavor of mint combined with ginger, chillies and corriander leaves makes this thokku very spicy and a perfect combination for a lot of dishes. Lets go to the recipe..
You will need : Mint : 1 bunch Corriander leaves : 1 bunch Ginger : 3 tblsp chopped Red chilles : 15 to 20 Tamarind : lemon size ball Salt : as per taste Method : Wash the mint leaves and corriander leaves and keep aside. In a kadai heat some oil and fry the ginger pieces, tamarind, chilles followed by mint leaves. Then grind all these along with corrainder leaves, salt and turmeric powder into a fine paste. In the same kadai, heat 2 tblsp of oil and add a tsp of mustard seeds and wait till it crackles. Then fry the ground paste until oil separates along the sides. Add oil in between as needed and stir occasionally to avoid burning. After it is cooled transfer it in an airtight container and use it with a dry spoon.
