California Club Pizza
This is Matt's favorite Pizza at CPK if any of you know the place. So today I tried to recreate it. It was PERFECT! Exactly like the restaurant but more for cheaper! It's got chicken, bacon, lettuce, tomatoes, cheese, and avocados. Just like a California club sandwich but on pizza. We made one of honey wheat dough and one on white dough. California Club Pizza Pizza dough (recipe down below) 2 cups chopped ice burg lettuce 1 cup chopped romane lettuce 4 tablespoons mayonnaise 1 cup bacon (cooked and crumbled) 2 chicken breasts 1 tomato, diced 1 Avocado, sliced Olive Oil Mozzarella cheese -Cook bacon as directed, crumble, and set aside. -Pound chicken until it is thin. Cook in skillet. Cut it into small bite size pieces and set aside. -Cook dough in oven as directed. Last 3-5 minutes brush dough with olive oil and sprinkle cheese over it. Let cheese melt and remove from oven. -Put chicken and bacon on top of cheese. -In a bowl mix lettuce and mayonnaise. Stir until the lettuce is well coated. Place on pizza and spread it out evenly. - place tomatoes and avocado on top and serve. Wheat Pizza Dough 1 package dry yeast 1 1/4 cups lukewarm water 1 1/2 cups whole wheat flour 2 cups all purpose flour 1 tablespoon olive oil 1 tablespoon honey 1 teaspoon salt -Proof yeast in a measuring cup with lukewarm water. -In a food processor add whole wheat and all purpose flours, proofed yeast, oil mixed with honey and salt. Pulse processor to combine all ingredients. Then process until the dough forms a ball on the blade. Remove dough to a large oiled bowl. Cover with plastic wrap or a kitchen towel and let rise in a warm place for 45 minutes or until dough has doubled in bulk. Punch down dough and transfer to a floured board and knead briefly. On a floured board roll and stretch each piece of dough into a 7 to 8-inch circle. Place each circle on a wooden pizza peel or pizza pan and top as desired. Preheat oven to 450 degrees F. and bake 7 to 8 minutes per pizza. related searches : California
