Vatha kulambu
Today my better half was craving for bitter flavor. Something tangy, spicy - rice combo dish. Wanted to try south indian food after a while. Ingredients: Onion- 1 medium garlic - 4 or 5 cloves red pepper flakes - 1 tbsp pappad - 1 no vathal - 2 tbsp [ dried okra or dried turkey berry or dried blacknightshade or combo of all these] brown sugar -1 tbsp asafoetida - 2 pinch paprika - 1 tbsp coriander powder -1 tbsp cumin powder - 1 tbsp turmeric powder - 1 tsp tamarind sauce - 2 tbsp diluted in 11/2 cup of water fry and grind channa dhal - 1 tbsp urad dhal - 1 tbsp red chillies - 3 or 4 fenugreek seeds- 1 tsp coriander seeds - 1 tsp cumin seeds - 1 tsp pepper corn - 1 tsp salt and oil Seasoning: urad dhal and mustard and curry leaves Method: 1. In a pan fry the item under fry and grind and grind them together. Or you can simply use idli powder 2. In a deep bottomed pan, add 2 tbsp of oil and fry cumin seeds,asafoetida , pepper flakes and garlic slices 3. Add broken pappad and vathal and let if fry fine 4. Add chopped onion and cook fine. 5. Add the spice powders and cook till raw aroma escapes. 6. Add the tamarind solution and cook till, it is reduced to half. 7. Once it is cooked fine, fry seasoning items and add it to the kulambu 8.Pour a tbsp of sesame oil and turn of the stove. Serve with hot rice and ricewafers.
