A quiet Saturday

Good evening. Today has been a lazy day! Hubby spent a good portion of the day putting together a PDF file of my recipes (coming soon!) I on the other hand wrapped myself in a quilt cuddling with Jasmine. She enjoys attention but isn't one for intense cuddling..with today being the exception. Her love meter must have been low because she laid purring snuggled up with me for over 2 hours. I of course basked in her attention since it's so rare.

We started off the day with a late breakfast of what? Egg's Benny of course ;) What can I say...it's a weekend tradition. Especially now that I found the low point hollandaise sauce.





















Of course it didn't disappoint!






















Mid afternoon I was craving something cold and different. I chose to try out this recipe that was in my Starbucks Via coffee box. I did a little experiment. I made hubby one following the exact directions except I left out the ice and used a frozen banana. Then I made one for myself using .5c frozen yogurt instead and 1c original Almond Breeze instead of .5c milk...to bring it down in pts.

This was mine. They tasted almost identical and both had a nice thickness to them. Mine was slightly stronger in coffee taste. I find the Via coffee's a little on the strong side so if you don't like it a bit strong I suggest using only half a packet. Also this is one serving, but really it's easily a serving for 2!

I added 2 tsp of Udo's oil into mine just to get my daily amount in. Without oil my huge smoothie was 5pts. Hubby's was 7pts. Worth the small change!

I also had 1/4c almonds...
















Dinner was a tortilla wrap w/1c of leftover rice mix from last night with 30g light cheese, spinach, 2 Tbsp light sour cream, salsa and 1/4 avocado. YUM!!

For dessert I tried something new. We wanted ice cream but I didn't want to spend allot of points so I took 1/2c vanilla frozen yogurt and put it into the food processor with 1 frozen banana, .5 frozen cherries and 1/4c almond breeze.













It made over 2 cups of "ice cream!" It works out to 1 pt splitting the recipe into 2 servings.

I decided to use these little chocolate cups I've had for a while. They are 1 pt/cup. I also sprinkled the tops with a little cacao nibs.













I poured my "icecream" into a baggie, cut the corner off and squeezed my mixture into each cup.





















It was a nice treat & I am now half way through the weekend 100% on points...WOO-HOO!!

P.S. Did you know that your Zodiac sign may have changed? Mine and hubby's is the same (Sag) but my nephew is the new sign and my mom is no longer a Pisces but an Aquarius!! LOL...what are your thoughts on it?
