A Vegan in Paris--Eggplant and Baby Artichoke Tart for Dinner at Le Petit Pontoise

My main course at Le Petit Pontoise our first night in Paris was a soul-satisfying eggplant and baby artichoke tart with some kind of delicious tomato paste holding the eggplant pieces together. (See the previous post for my starter which the French call the "entree.") When I replicate this memorable dish--and I will definitely be trying to do just that--I will post it post haste! The side salad, as you can see, was topped with two enormous shavings of Parmesan cheese which I happily handed off to my husband.

Note: At the restaurant, I obviously couldn't "stage" the photos, so I apologize for the quality of this one. It doesn't begin to do the tart justice.
