Aaloo ki Sukhi Masaledar Subji (Spiced Dry Potato Subji)
Potato is a staple food in my house. It is a very versatile vegetable and there are many ways to prepare something out of it. Here is one of my preparation. It's one of my favourite. Ingredients: 8-10 baby potaoes boiled. 1 small onion chopped finely. 1 tomato chopped. 1 green chilli chopped. 1 tsp of grated ginger. 1/2 tsp cumin seeds. 1/2 tsp coriander seeds slightly crushed. 2 tbsp coriander powder. 1/2 tsp red chilli powder. 1/4 tso turmeric powder. 1 tsp garam masala. 1 tsp salt or to taste. 1 tbsp oil. Serves 2. Process: Peel the boiled potatoes and cut them into half. Set aside. Heat a pan and add oil. When heated add cumin seeds, coriander seeds, chopped chillies and grated ginger and saute for 30 seconds. Add chooped onions and saute for 2-3 minutes and then add tomatoes. Add salt and heat for 2-3 minutes. Keep stirring till the tomato melts. Add all the spices except garam masala. Heat for another 2-3 minutes such that all the spices are cooked and gives a nice aroma. Now add the potato halves. Add garam masala and mix well such that the spicy mixture is coated all over the potatoes. Cook for another 2 minutes. Turn off the gas and take it off the gas. Transfer in a serving bowl. Serve hot with phulka or puris. Enjoy!!
