Banana Rocky Mountain with Cashew ?Chocolate Whipped Cream?
On Sunday, I attended a raw food uncooking class with my meetup.com raw food group. Here is one of the yummy recipes Mihoko Sekido shared with us: Ingredients: WHIPPED CREAM 200g cashews 2 tbs cacao powder 2 tbs or more coconut oil (more for runnier sauce) 1 pod of vanilla beans or extract dash Himalayan salt dash lemon juice agave or other sweeter to taste BANANA MOUNTAIN 10 bananas 2-3 tbsp coconut oil coconut flakes (to your liking) 1 pod of vanilla beans (better than extract for the banana part) dash lemon essential oil? Directions:
Measure ingredients for cream into blender and blend until smooth, adjusting texture by adding more oil if necessary. Set aside. For banana rocky mountain, chop the bananas into bite size pieces and place in a big bowl. Then add the coconut oil, just a bit at a time, and mix with hands. It’s OK if the oil is solid, as the warmth of your hands will melt it. Add in remaining ingredients and continue to mix with hands. The vanilla aroma will waft up around you! Heap banana mix into a mountain on a dish, and cover with cream.
