Belgian Endive Salad

Do you believe in stupid headaches? I do. Stupid headaches are ones that I get and for which I don't deserve sympathy. I get a stupid headache when I work at the computer, but sit with my feet propped up on the desk and the keyboard on my lap, forcing me to turn my head to the right to look at the monitor. If I sat up straight in front of the computer with the keyboard where it belongs and my feet on the ground, I wouldn't have a stupid headache.

My stupid headache is, in fact, doubly stupid because most people wouldn't get a headache of any kind from sitting that way. However, while in high school, my sister and I were messing around at the pool where we both worked and I dove in and broke my nose on the bottom. I also did a good job of jamming my head down on my neck. That caused and continues to cause stupid headaches. If I use the wrong pillow I get one. If I am under too much stress I tense up and get one. If I sit at my computer the wrong way and force my head in a direction it's not supposed to stay in for long periods of time, I get one. Really stupid headache.

As you've probably guessed, I have one now. It makes me ornery. It makes my husband stay down in his man cave (smart man). It makes me want to poke fun at things. Things like recipes I made earlier last week that included Belgian endive but that we didn't like. Remember that one? I went through so much to find one solitary head of Belgian endive and decided that I was not going to waste it on the recipe that I knew I wouldn't like after the first finger taste. So, I purposefully put the dip on just one endive leaf, keeping the others pristine.

I just about sobbed when Dudette decided to be adventurous and try a bit. That was another endive leaf down the drain, well, in the garbage since she spit her bite out and threw the rest of the leaf away. The rest of the leaves were gathered up and the small, cherished head was squirreled away. Until today.

Today I made my Belgian endive salad. I love this salad because it absolutely allows the beautiful, wonderful flavor and color of the endive to shine. It's so simple yet so elegant looking. Before I go grab some aspirin, let me share the recipe with you.

Belgian Endive Salad for One

1 head Belgian endive lettuce, sliced into ribbons
1/2 sweet white onion, sliced lengthwise
2 tablespoons champagne vinegar
3 tablespoons canola oil
1/4 teaspoon salt
1/8 teaspoon pepper
dash garlic powder
very small dot of mayonnaise (I use canola)

Mix all the ingredients together until well blended.

That's it. It's fresh, it's fabulous.

Please, don't say that you're sorry for my stupid headache.I deserve this one. Mom, you too. I know you're shaking your head. I know. I never learn.

Instead, please tell me to keep my feet planted on the floor where they belong, ok?
