Black sesame French macaroons...

I made Black Sesame French Macaroons with red bean ganache last year. This year I wanted them to taste really sesame, so I filled them up with black sesame ganache.

Ingredients:

for the shell
- 40 g ground almond
- 27 g ground sesame
- 67 g powdered sugar
- 50 g aged egg white
- 67 g sugar
- 16 g water

for the black sesame paste
- 80 g roasted black sesame
- 25 g sugar
- 10 g water

for the filling
- 50 g heavy cream
- 100 g black sesame paste
- 100 g white chocolate
- 20 g unsalted butter

Preparations:

for the shell and filling

for the black sesame paste
1. Bring sugar and water to a boil.
2. Blend together black sesame and syrup in a blender under smooth.
