Cooking is My Cardio

I decided to take the day off of formal exercise today. No yoga, no long walk, no bike ride. Just?resting.


 


Little did I know that I would get a workout anyway. I spent the whole day running around the kitchen, cookin? up a storm.


 


After grocery store trip #1 I made lunch.  Last week I bought some ripe plantains with the intention of baking them but I only got around to it today. I let them bake while I prepped lunch.

I sliced ?em up, put ?em on a baking sheet with parchment paper, IMG_7458


then ?glazed? them with melted butter and cinnamon.

I put ?em into a 375* oven for 30 minutes, then flipped ?em. 10 minutes later and VOILA!

Holy deliciousness. I made some healthy baked plantains foster as a pre-lunch snack?

Delicious! Just some of the sweet plantain goodness with a dollop of Greek yogurt and a sprinkle of homemade granola. Baked plantains foster for breakfast anyone???


 


While the plantains were baking, I started assembling the ingredients for Ellie Krieger?s Crispy Chicken (link to the recipe on my Recipes page). I diverted from the recipe and made a rub to flavor the chicken with before I put it in the buttermilk . Just some cayenne, smoked paprika, garlic powder, mustard powder, salt and pepper. It made the chicken very savory and smoky.

This is one of my favorite summer recipes. Perfectly crisp chicken on a bed of fresh, cool and healthy veggies. YUM! I highly recommend you try it.


 


The cooking marathon continued this evening with something I have been dreaming up for quite some time?.

YUM! My mom said this was ?the cutest meal she has ever had!? Not only was it cute but it was really delicious. Light and tasty!
