Cuckoo for Coconut Vinegar (Giveaway!)

A few weeks ago, I received some Coconut Water Vinegar from Tropical Traditions to sample.


After trying and loving their Coconut Oil, I had a feeling I would like this vinegar but I had no idea what to do with it at first!

To be honest, I had never even heard of coconut water vinegar, but I love using all kinds of other vinegars so I knew I could find some fun ways to use it.


While this is just like any other vinegar and has the usual tangy smell and taste, there is a little bit of coconut flavor that comes through ? and it makes for some delicious marinades and dressings.


The first thing I made with the vinegar was a marinade for tofu that I used in a peanut noodle dish for dinner one night.


For the tofu, I mixed together 1/3 cup soy sauce, 2 tsp sesame oil, 2 tsp coconut water vinegar, 1/3 cup peanut butter, 1 Tbsp garlic, 1 Tbsp ginger, pinch of salt and crushed red pepper. I let the tofu sit in the marinade for 20 minutes before crisping it up in the pan. It was awesome!


After the marinade, I?ve been making quick and easy salad dressings with the vinegar. I love the extra depth of flavor it gives.


Olive oil, coconut water vinegar, and a bit of lime juice makes for a great tropical tasting dressing, and adding a little brown sugar really puts it over the top. Add some mint and you almost have a mojito!
