Dinner.. Salad Roll
![]() My Mom is coming over tomorrow. I have Mexican flavored crackers going in the dehydrator and planned on making guacamole. Wanting to get a jump start on tomorrow I decided to make the guacamole this evening. Before I knew it everyone wanted something with guacamole. Since I have a refrigerator full of beautiful red chard I decided to make salad rolls. They were a hit. So delicious and so filling. I chopped up carrot with the "slap chop" (it isn't actually the slap chop- but the kids get so excited when I use it). I also sliced up red onion and some red bell pepper. I scooped guacamole onto the bottom end of the red chard (by the way I got 2 wrappers from each leaf of red chard by cutting along the line of the stem down the middle- on both sides). I topped the guacamole with carrots, red onion and the bell pepper, then you roll up and serve! As you can probably guess, I ran out of guacamole and will have to make more tomorrow. I also have to send hubby out for more limes as I ran out of them too! At least we will have this same dish for lunch tomorrow along with the crackers to dip right into the guacamole. Yummy! ![]()
