French Fridays-Roast Chicken for Les Paresseux
This was a November recipe. I made it before Thanksgiving and intended to post about it November 19. Better late than never?
Oui. I am part of les paresseux. And I can prove it, I didn't have any bread, it would have required me to pick up a loaf as I walked by the display when I was in a grocery store (and I'm in a grocery store almost everyday) and, who has the energy? So I didn't add any bread to the bottom! doh! I wish I had and next time I will! ? Dorie's trick of flipping the bird after the roasting makes such a difference! But, since I'm lazy and putting the bird on another plate/platter/whatever, and tenting it with foil would mean I had to wash said plate/platter/whatever, instead of taking it out of the pot and doing that, I just flipped it over in the pot and put the lid back on the pot. I thought it cooked quickly, tasted so good and was very moist. All the taste testers like it too and they are not big fans of roast chicken. The little that was left over made a delicious chicken salad! I will make this again. With the addition of a piece of bread for the bird to rest on! And me to nibble on! The perfect dish for lazy people. Like me! ?
