Grilled Cheese with Apples and Caramelized Onions

Last week, I bought the most amazing farm box.  Rather than just the standard veggies and fruits, this box also contained two loaves of homemade bread, eggs, homemade potato salad, fresh squeezed valencia orange juice, and an assortment of fruit, veg, and herbs.

Seriously.  And it was all just $30.

I had to practice a lot of self control in order to not down the entire container of juice and potato salad as soon as I got home!

I used some of the fresh country levain bread and one of the apples to make a tasty grilled cheese.

First, I caramelized 1/4 cup of diced onion by cooking it over medium heat for about 7 minutes (careful not to burn).  Then I added a tablespoon of balsamic vinegar to the onions and allowed it to cook down for about 3 minutes.

I layered thin slices of Kerrygold Dubliner cheese and plain cheddar cheese onto the bread.  (You can use any type you want, but in my opinion a sharp flavored cheese is best.)

I topped the cheese with the caramelized onions and thin apple slices and finished with one more layer of cheese and the second piece of bread.

Last, I grilled my sandwich in a tablespoon of butter until the bread was crisp and the cheese melted.

So simple and so good.
