Health & Sugar: Baked Banana Bar

By Kurious Kitteh Kooks! (Visit website)

I like sweet things.  I also like things that make you feel good.

While sweet things sometimes do that, they aren’t always the best for you.

Inspired by these yumtastic cookies that I made last month and actually made me feel better, I wanted to make a bar with similar ingredients.  Why a bar, I don’t know.  But the baked bar spirits were calling me, and who am I to disobey a message from food-heaven above?

So we take a little break from Island Hopping (though it’s just begun) to get in a perkifying dose of B vitamins from bananas and whole grains, and a splash of sunshine from some omega-3 filled flax seeds.   Mmm.

Baked Banana Bar

1/2 cup honey nut cheerios

1/2 cup rolled oats (instant is fine, flavoured is not)

1/2 cup flax seeds

1 banana, sliced legthwise

2 tbsp sugar

1 egg

3/4 tsp baking soda*

milk**

chocolate chips

1. Preheat oven to 350*F/180*C

2. Toss first three ingredients into a blender, and mill until mostly fine. You’re basically making a flour here.

3. Dispense flour into a bowl, and stir in sugar. Crack egg on top. Using a fork, evenly moisten flour with egg. This is very important, and takes a while.

4. Sprinkle baking soda on top, and evenly work through the mix. Add in milk, and thoroughly blend.  It should be quite easy to stir, though not runny.

5. Press mix into the bottom of a baking dish. Layer slices of banana on top, and sprinkle with chocolate chips. Top with an equal amount of mix, patting down to smooth.

6. Bake for 15 minutes, until top is dry and just the edges have browned.  Let cool, cut, and serve.

Notes:

*I think that’s how much I used. Apparently I forgot to write it down -_-”.

*I had a little accident while pouring in the milk, but i would approximate this as at least 1/4 cup.  With enough milk, the mix should look like oatmeal and have a similar consistency.
