Kolhapuri Mutton
Kolhapuri Mutton Ingredients Mutton: 500 gm Coriander powder: 1 tablespoon Cumin powder: 1 teaspoon Garam masala powder: 5 gm Ginger: 10 gm Garlic: 10 gm Sesame seed: 30 gm Dry coconut: 5 gm Fresh coconut: 15 gm Coriander leaves: 10 gm Poppy seed: 1 teaspoon Onion: 100 gm Oil: 100 ml Turmeric powder: 5 gm Chilli powder: 2 teaspoon Salt to taste 2 - 2 1/2 cups water Chopped coriander leaves for garnishing Method For the masala: Make a fine paste of ginger, garlic, sesame seed, dry coconut, fresh coconut, coriander leaves and poppy seed with little water. Heat 50ml oil in a wide kadai / frying pan. Add half quantity of sliced onion and fry for 3 - 4 minutes. Then add mutton and fry till half done. Keep aside. Heat the remaining 50ml oil. Fry remaining sliced onions till golden brown, add ground masala, turmeric, coriander powder, chilli powder, cumin powder and cook well. Then add half done mutton, mix well, add 2 cups water and salt to taste. Cover with a lid and cook on a low heat till done ( till the gravy thickens ). Sprinkle garam masala powder.
