More Halloween Shenanigans...
I don't know about you guys, but this was by far my favorite Halloween ever! We had so much fun. We had two of our best "couple" friends over for some pre-going out fun. We sat around and played cards, ate and drank pumpkin beer! Everybody's costumes looked so awesome.
Sorry for the blurry/awkwardly-colored pic. It was on a timer. ![]() Kris's costume was my favorite. He was pretty much dressed as a 70s pornstar. It was hilarious. ![]() ![]() We didn't end up going out to the bars until 11:30 or so, which was nice because it didn't give us alot of time before bar close to get drunk & stupid. Everybody was still walking straight by the end of the night, and we had a sober driver so it was all good. The next day we all went out for lunch at Country Kitchen here in town. :-) I got the chicken bacon pepper melt with fries. I needed something a little greasy! Why is it that you just crave fried foods the day after drinking??! I only ate half of it though, and brought the rest home for later. ![]() The day yesterday was spent lounging around watching college football, knitting and snacking on leftovers from Friday night's appetizer spread. By the time dinnertime rolled around, I wasn't all that hungry, so I just made a nice, light Greek Salad w/ feta cheese, olives, chicken and red onions. YUM. ![]() Kris and I fell asleep on the couch watching Superbad on Starz. (That movie is HILARIOUS!). We woke up around midnight and finally made our way to the bedroom. I slept VERY good last night. This morning Kris woke us up for church. He thought he was waking us up at 9:30, but it was actually 8:30 because we had forgotten to roll back our clocks. But that gave us time to make a nice breakfast before church. Our friends Paco & Stacia were telling us about these oatmeal pancakes that they make alot, so I decided to try them!! I didn't exactly measure the ingredients... but all it is is oatmeal (I used about 2 cups) mixed with egg whites (just enough so that the 'batter' is the consistency of watery cooked oatmeal). I also added a tablespoon of peanut butter and tablespoon of apple butter to the batter. ![]() Spoon them out onto a frying pan, cook a couple minutes on each side.... ![]() And, voila! Delicious, high-protein oatmeal pancakes. ![]() I topped mine with sugar free maple syrup and bananas. YUM.
