Morning pasta prep

It’s Tuesday!  How is everyone this morning?


Let me catch you up on yesterday.  Sooo I didn’t end up mopping yesterday morning.  Is anyone else not surprised??  :)   I did sweep…..which is one step closer to mopping. AND I fixed dinner yesterday morning.  See I was still productive!  (I would much rather cook that mop any day!!!!)


Dinner Prep:


I decided on a veggie pasta bake.



Simple enough ingredients…..things I just had in the pantry, fridge, and freezer.  Have you noticed yet that I like meals where you can get a complex carb, lean protein, AND some veggies in all in one dish…..time and convenience here people! 


I began by cooking the noodles on the stove top (3 cups of noodles).  While cooking, I chopped up veggies and thawed the frozen spinach in the micro and added them to a large bowl.




1 cup bell peppers (I used orange, yellow, and red)
1 cup spinach
1 large garlic clove chopped

Next, I heated up the soy crumbles and onions in a pan on the stove




2 cups soy crumbles
onion (I didn’t measure, probably about a 1/3 to 1/2 cup though

After the “meat” was done cooking and I had drained the pasta, I added them into the large mixing bowl with the veggies and stirred well.



Added 1.5 cups sauce, mixed well again, and dumped in glass dish and topped with cheese.




Dinner is ready!  :)   Added saran wrap and into the fridge it went till actual time for dinner.



I love going to work knowing that dinner just has to be popped in the oven when I get hom!  Such a relief! 


Lunch:


Lunch yesterday consisted of my tilapia, rice, and veggie leftovers from my crockpot experiment on Sunday.



Again, I topped this meal with some low-sodium soy sauce for some added flavor.


Afternoon Snack:



A Two Moms in the Raw Gojiberry Granola bar.  This is the same flavor I tried on Saturday and I was craving this one yesterday, even though I have another flavor of granola bar from this company to taste.  I really, really like this bar!!! Along with my granola bar I had some jumbo strawberries and about 1/2 of a container of Greek yogurt



Dinner:


When I got home, I preheated the oven to 350F and popped the pasta dish into the oven for about 20 minutes or so.



Twas delicious!  Even got a “You’ve made something like this before, right” from the husband, followed by “I like when you make this.”  Never told him it was soy crumbles and not ground turkey and I was super pleased about him eating spinach!!  :)  


House Update:  We didn’t get the house that we put in offer in on last week.  We were 1 of 3 offers and well, apparently someone else has more money than we do.  :)   After dinner last night we went and looked at a beautiful, brand new condo.  We’ve looked at these a few times in the past, but last night’s visit was to see if my car (an SUV) would fit into the garage.  It did so we are possibly putting in an offer today?!?!?!  We shall see!  :D


Nephew update:  First of all, I just wanna say again how wonderful all of you all are!  I have had many sweet comments on my blog, on twitter, and via email!!  You guys ROCK!!!  According to the autopsy, my nephew had a small hole in a chamber of his heart that was preventing him from circulating enough oxygen throughout the rest of his body.  His little heart just finally gave out.  After looking at the (very expensive) plane ticket prices Russell had decided that he was going to go out the Vegas solo….well with his other siblings, I just wasn’t going to go.  But, Russell’s brother and wife have just decided that right now they just don’t feel like a housing a whole-slew of people.  I can respect that.  Sooo neither Russell or I will be traveling out west this week.  BUT thank you all for the continued thoughts and prayers……you guys really are awesome!!


I have already worked out an ate breakfast this morning, but now I gotta go get ready for work, so I’ll just post about today later on.  Have a happy Tuesday!!!!!
