Oscar Pizza Night
Good Afternoon!
I hope everyone is surviving their Monday and are looking forward to the rest of the week. Last night I made pizza to celebrate the Oscar Celebration and thought it was a good idea to be pigging out on pizza while critiquing all the actresses looks. Just kidding! I did watch some of the Oscars and thought that many of them looked "healthy skinny" and beautiful and I did make pizza as well. I made a fabulous Veggie Pizza with a Trio of Red, Yellow and Orange Bell Peppers, Red Onion, Mushrooms, Black Olives and Pineapple Chunks on Whole Wheat Crust. I love sweet and savory foods and the sweetness from the pineapple and the saltiness from the black olives was divine! The good news is that I only had two slices and was able to control my pizza intake. That is huge for me since pizza is one of my favorite foods. Yum, It was a rainy day here in Austin this morning so I ended up running in the parking garage before teaching Bliss Boot Camp and definitely felt like I burned off some of the pizza. I actually woke up a little early and had time to make quinoa for breakfast. This is one of my favorites that is coming out of the closet again. I used to make this all the time switching between oats and quinoa. Quinoa is a fabulous grain and I need to get back on the quinoa band wagon. I made Red Quinoa topped with Dates, Golden Raisins and Almonds. Red Quinoa topped with Dates, Golden Raisins and Almonds 1/4 cup red quinoa 1/2 cup water Bring water to a boil in small pot, add quinoa, cover and reduce heat to low. Cook for 15 minutes or until water is absorbed. Top with: 2 dates, chopped 1 tbsp golden raisins 1 tbsp almonds drizzle of honey Yum! I then met one of my Eating Coach clients at the grocery store for a field trip. We went shopping together and I was able to introduce her to some of my favorites and show her some healthier alternatives to some of her favorites. It was a good learning experience for both of us and I look forward to seeing what she thinks. Lunch was a super quicky for me because I did not have a whole lot of time before picking up the kids. So it was my default meal- Greek Banana Salba Bowl. Greek Banana Salba Bowl 3/4 cup Fage 0% Greek Yogurt 1 banana sliced 1 tbsp Salba Smart (sprinkled on after pic... was in a rush) Sprinkle of Barbara's Shredded Oats Quick and Delicious. I have also had a handful of Puffins Peanut Butter Cereal. That stuff is dangerous. It takes like Peanut Butter Captain Crunch and is oh so good! Yikes. I actually picked it up for the kids but I don't think they even like it, so I really picked it up for me. My guilty pleasure-- cereal munching. My body is telling me that I need eggs for dinner so I think I am going to make Blindfolded Eggs on a bed of sauteed Rainbow Chard. This is the "fend for yourself night" as far as eating goes because of kids activities and they have already requested Annie Chun's Miso Bowls with extra tofu for dinner. I really do cook for my family and kids but some days everyone is just going every which way and we just end up all eating at different times. My guilt is shining through. So it is time to get Zoe to dance so I hope you survive the rest of your Monday and I will check back later! related searches : Oscar
