Our First Garden Treasures
Tonight's dinner was absolutly amazing! Emmet and Zoe were so excited, we actually were able to pick a Lemon Cucumber, Yellow Squash and some Rainbow Chard from out little garden and make it for dinner. I also love my new book, The Gorgeously Green Diet, How to Live Lean and Green by Sophia Uliano. And one of the things she recommends it to grow your own food. I have to tell you our meal tonight was super fresh and delicious and guess what? the kids ate all the veggies! I wish we had had a bigger abundance of things to give them because they were so excited to try what they had grown. The Lemon Cucumber was the best! And Emmet loved the Rainbow Chard and Squash. Dinner tonight was Fresh Catfish from Whole Foods seasoned with a little olive oil, juice from one lemon and Ms. Dash Lemon Pepper, baked at 400 degrees for 20 minutes. Simple and delicious. I also made a Crunchy Salad that was perfect with the simple fish. My husband even enjoyed it! Crunchy Salad 3 cups Spinach 1/2 lemon cucumber, sliced 1 cup Mann's Broccoli Slaw 1/2 cup of Matchstick Carrots Handful of grape tomatoes, sliced 1/2 orange bell pepper diced 1/2 cup of red cabbage Grated Hard Goat Cheese Dressed with 1 tablespoon dijon mustard, 1 tablespoon balsamic vinegar, dash of olive oil. Everyone in the family loved this meal and that made me so HAPPY! I was oh so good all day and then my husband brought home a surprise for me from Whole Foods. My favorite vegan Joy's Slice Cake. Normally I would be thrilled but I was on my lean and mean quest today and I do have strong will power when in comes to Dessert! This is my absolute favorite cake and would love to learn how to make it. I love the raspberry filling and it is my favorite kind of chocolate cake... not too rich and dark. My plan was to eat the following amount of cake- approximately 1/3 of the piece.... but then my husband wanted a bite and could not believe how good it was and was basically horking down on the rest of the cake so I had to have a few more bites and we ended up polishing off the rest of it! Oh so good and definitely worth the calories. I am on a mission to see if I can make this at home or maybe in cupcake form so it is more portion controlled. I also was so excited because Rhubarb is in season and I was able to buy some at the store today. Rhubarb Pie is my favorite pie. I don't know if this is a Midwestern thing or not but we grew up with Rhubarb Pie and it has always been my favorite. My husband is from the south and had never even heard of it before he met me... hmm...interesting. So our plan for this weekend is to go the the Farmer's Market, the Natural Gardener and basically bake, cook and garden while Dad is out of town. Emmet says he is back to wanting to bea chef when he grows up...he vacilates between wanting to be a chef, an historian or being in the Senate.
