I'm sure, if you're like most "average Americans" that you're aware of the intense bite cost of living takes out of your budget as food and gas prices rise on a daily basis. I'm all about cutting corners when its possible without sacrificing great tasting food. I've mentioned coupons (get them right here on this page by clicking in the top right hand column - click and print), taking advantage of buy-one-get-one items and planning your meal around what you already have and what's on sale that week. Here's another tip you might like to use: rice.
Saturday I cooked us up a batch of thin steaks smothered in onion gravy. We had too much rice so there were leftovers. Trash or keep? For those of you who don't like left-overs, take a moment to consider this: at this time in life, we need to be conservative. OK, off my soapbox now. I saved the rice in a baggy and used it this morning with breakfast. It was quite tasty in my Breakfast Tower.
I fried an egg and used it for a foundation. Then for the next level, I used a spoon of rice with a sprinkling of paprika. I topped that with a layer of crispy bacon and then added one more layer - an egg sprinkled with parsley - to finish my tower. I served that up with a piece of buttered toast and we had a tasty breakfast to feast upon.
This is just one idea for "re-using" ingredients. It's less costly, tasty and above all resourceful. When you're in the kitchen, think twice before throwing away an item which could be "recycled" instead of trashed.
