Thursday Night - Dad's Fish Stew
Recently I visited Simply Recipes, a website I check often for meal ideas, and stumbled across a recipe for Dad's Fish Stew. I added it to this week's menu for a couple of reasons: 1) It looked easy enough to make. 2) It called for ingredients I have in the house/pantry, and 3) I was looking for something that would be great in the winter and soup is always on that list. I made it tonight (Thursday) with grilled cheese sandwiches. It was indeed easy to prepare. It took no time, as a matter of fact. My brother liked it. Serena ate a couple of bites of fish from it. I ate half my bowl, thought it was okay, but I doubt I would make it again. It just didn't blow me away. I loved that I could make it quickly on a work night, on a week where Serena was under the weather, but it just didn't make me go "wow". But please keep in mind, I'm unusual when it comes to fish. Perhaps after living in Florida for so many years, I just have a different expectation of seafood in general. I would encourage you to try it and give me your opinion. Dad's Fish Stew Simply Recipes 6 Tbsp olive oil 1 cup of chopped onions 2 large garlic cloves, chopped 2/3 cup fresh parsley, chopped 1 cup of fresh chopped tomato (about 1 medium sized tomato) 2 tsp of tomato paste 8 oz. of clam juice 2/3 cup dry white wine 1-1/2 lb fish fillets (use halibut, cod, sole, red snapper, sea bass), cut into 2-inch pieces Touch of dry oregano, Tabasco, thyme, pepper Salt Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and saute 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer. Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve. related searches : Thursday
