Vangi Bhath / Brinjal Rice

Ingridents:
4 Brinjal2 Tomattoes2 Onion1 cup any vegetables ( Optional)2 Green ChilliesFew Curry LeavesCorinader1 tsp Udit Daal/gram dal2 tsp Mustard4 tsp Vangi Bhath Masla PowderTamarind Juice 1/2 cup1 tsp jaggary(optional)2 tsp Haldi/TurmericSalt to TasteOil

Time Required: 30 Mins

Directions:

Cook the rice and keep it aside. In a pan, fry mustard, gramdal and chillies. Remove and set aside. Fry brinjal and other vegetables with a pinch of turmeric in the same oil. Add 4 tsp vangi bhath masala powder, tamarind juice, salt to taste and jaggary if desired, Ass the fried seasoning and fried copra and cooked rice. Mix well.

Serving: Serve hot with hot chips items or with onion tomatto raitha.
