Vangi Bhath / Brinjal Rice

Directions: Cook the rice and keep it aside. In a pan, fry mustard, gramdal and chillies. Remove and set aside. Fry brinjal and other vegetables with a pinch of turmeric in the same oil. Add 4 tsp vangi bhath masala powder, tamarind juice, salt to taste and jaggary if desired, Ass the fried seasoning and fried copra and cooked rice. Mix well.
Serving: Serve hot with hot chips items or with onion tomatto raitha.
