A recipe wonderland

I do not mean to ignore you all!! I am so sorry, but having a new business is definitely time consuming. I knew that being an attorney would take care of my love for talking, but man! I did not expect to have to do THAT much talking... Anyway...Things are going well and being self-employed is a great way to develop the skills you always wanted...mainly PATIENCE.

Thank God for the food and the amazing summer product out there. Not only they bring a splash of color into the daily routine, but they also bring great taste to any dish.

Speaking of taste, doesn't this salad look great....Strawberry Poppy seed from Panera



I had it at Panera for lunch today, as I met with an attorney colleague of mine. Before heading to Panera, I researched online their healthy options. People think that just because the company advertises healthy choices and fresh ingredients, then anything on the menu has the stamp of approval...but WATCH FOR THE HIDDEN PROBLEMS.

Lets take the salad I ordered as example. One could think...SALAD = Healthy..Yes, if you made it at home! But when it comes to go out...be careful.

The total kcal for the salad are 280.
Great.
The SODIUM??? 510mg! I think it is a bit too high for a salad...so where does it come from? well the "grilled chicken." Although grilled, it is packed with sodium.. 360mg for maybe couple ounces! ARGHHHHHH

So watch out, and if you know where you are going to be eating, do a quick online search for their nutritional values so once at the place, you can order without falling into traps!

As for the rest of the weekend and the previous days...well there wasn't anything exciting going.... we ran...we ate...and we ran some more.

As for the food, here are some highlight

Lunch
sandwich with grilled veggies ( I grilled an eggplant and zucchini and dressed them with oilive oil and balsamic vinegar...grilled veggies are a great substitutes for salad!)


Dinner:
NEW RECIPE (with Eric's stamp of Approaval)

Grilled Turkey Burgers with lemony black bean sauce and grilled veggies.

Step 1: grill any veggies you might have in the fridge. I used peppers, and zucchini (including yellow ones)
Step 2: when the veggies are done, set aside and focus on sauce. Half a can of low sodium black beans, the juice of ONE lemon, one tablespoon of tomato sauce and your food processor. Blend.
Step 3: Grill the turkey burgers. When done, dress them with the sauce you made and then add on top the grilled veggies. As a side Eric and I shared an apple.
You get proteins, carbs and veggies in a fast recipe!
Step 4: LEFT OVER VARIATION. So we had some veggies left over from the ones I grilled for lunch, so we made "veggie Pizza." The base? whole wheat flat bread. The topping? Grilled veggies, fresh tomatoes and feta cheese. Broil in the oven until the bread is crispy and you have it!
And then today arrived.
So you know already about my lunch...which by the way I biked to...when Eric is at work, he takes the car and I move with the two wheeler! It is fun although today was a heat day so...not so fun. Anywhooo

After I came home, I drafted papers, made phone calls and prepared the to do list for tomorrow! I am a to do list type of gal. Then, headache kicked in...I think the sun was just too much for the bike ride! Eric went to the Gym and I rested, after eating a snack. {blueberries, blackberries with one cubed string cheese}

Before he came back, I was good to go and I had whipped out a lunch recipe for him to take to work tomorrow...he is sick of sandwiches...ready to take a look?

Cold Pasta with Grilled Vegetables and Chicken in a lemony dressing

In Italy, cold pastas are typical of the summer time. They are the easiest thing to make and so versatile. I cooked the pasta, and while cooking, I grilled some veggies. Then tossed the whole thing together, added some olive oil and let it cool down. Eric will add grilled chicken tomorrow or feta cheese (whichever he is in the mood for it).

As for dinner we ate this:Grilled chicken, with baked thinned slices of potato and veggies.

I will try to be more consistent but work is a priority so forgive me if I skip couple days!

Stay away from the heat!
