Cooking class
Welcome to the Food City studio audience! Monday night, I watched my first cooking class demonstration. I loved it!! My mom and I attended the first class of a cooking demo series at a local grocery store, Food City. Me, mom, and a group of others looked on as 4 different breakfast dishes were prepared It was really fun watching Sue Mallick put together 4 different recipes in less than an hour. The recipes that were prepared were: Berry Breakfast pudding [click for recipe and for video of dish being prepared] Lighten Up Egg Scramble Homemade Granola Breakfast Burritos The recipes were very simple, yet made very tasty-looking breakfast options. And the best part about the recipes were they can all easily be “cleaned” up! Sue prepared all the recipes while talking us through every step. I decided it would be pretty cool to cook with majority of the ingredients premeasured!! :) The best part of the class was the taste testing at the end…..of course!! My plate: I tried the Lighten Up Egg Scramble, the Homemade Granola, and the Berry Breakfast Pudding. I didn’t try the Breakfast Burrito though because it was prepared with bacon. However, when preparing this recipe at home, it could easily be made with uncured turkey bacon to health it up more. I loooooved the Homemade Granola….. And I also looooved the Berry Breakfast Pudding so much I’ve made it since the class. Here’s my cleaned up version of Sue Mallick’s Berry Breakfast Pudding: 3 cups fresh berries [I used strawberries, blueberries & raspberries] 1/3 cup egg whites 1/4 cup raw sugar 1 tsp vanilla extract 1/2 tsp sea salt 1 cup skim milk 1/2 cup unbleached, all-purpose flour 1/2 tsp baking powder I followed Sue’s Preparation Directions: 1) Preheat oven to 400F. Spray 2 qt baking dish with cooking spray, add berries, and set aside. 2) In a large bowl, combine egg, sugar, vanilla, and [sea] salt; whisk until light and frothy. Whisk in milk until combined. Add flour and baking powder, whisk until smooth. Pour over berries. 3) Bake for 20 to 25 minutes or until puffed and golden. Serve warm. *** I used a 1.5 quart baking dish, therefore I had to bake my Berry Pudding much longer. I’m looking forward to my next cooking demo class….maybe someday I can do my own cooking demo!!
