Egg Pulusu/Kodiguddu Pulusu/Muttai Kara Kuzhambu

Ingredients:

5 Boiled Eggs
1/2 cup Coconut Paste
1 medium Tomato chopped
1 small Onion finely chopped
5-6 Green Chilies slitted
1 tbsp Ginger-Garlic paste
2-3 Tamarind Juice(or as desired)
1 tbsp Coriander Powder
1/2 tsp Turmeric
2-3 Red Chili Powder
Freshly chopped Coriander Leaves
Salt to taste
5-6 tbsp cooking Oil

Method:

Heat Oil in a Kadai/Pan,add Onion,Green Chilies and cook until the Onions turn light brown in colour.
Now add the Ginger-Garlic Paste and fry for 8-9 sec's or until the raw smell is gone.
Then add the Coconut Paste,Red Chili Powder,Coriander powder,Salt,Eggs,water as required.
Mix well,close the lid and cook in medium flame for 15-20 min's ( add more water if required).
Now add the Tamarind Juice,mix well,check for spices.
Add the chopped Tomato,close the lid cook for another 10 min's.
Sprinkle freshly chopped Coriander Leaves and switch off the Flame.
Serve with Steamed Rice.
