Five-Vegetable Soup
Ingredients
3 medium size yukon potatoes 2 medium leeks 3 carrots 1 cup of butternut squash 1 onion 1 can of chopped tomatoes 1 or 2 qt chicken broth a bunch of parsley salt and pepper cream cheese (like Laughing Cow). Clean, peel and cut the vegetables. Open your can of chopped tomatoes. Careful with the leeks that all dirt is off them. ![]() Place all the vegetables in a big pot or pressure cooker with the parlsey. Add the chicken broth until it just covers your vegetables. Cover bring to a boil and then simmer until vegetables are soft (about 1 hour). If you are using a pressure cooker cook for about 30 minutes. Open your pot. Add some cream cheese, and with a hand blender blend your soup. Add salt and pepper to taste. Once school starts we try to get our children to have at least 2 soups per week. It is a great way to get them to have the vegetables they need to strengthen their immune system.
