Indonesian Mutton Curry, Golden Fried Prawns & How to make a pineapple bowl ?
Indonesian Mutton Curry ( Tender mutton cubes in coconut gravy ) Serves: 4 Time required: One hour plus one hour marinating time Ingredients 500 g boneless mutton 2 large ( 150 g ) onions, chopped finely 2.5 cm ginger, grated 2 tablespoon ( 30 g ) coriander seeds, powdered 1 teaspoon ( 5 g ) cumin ( jeera ) seeds, powdered Salt to taste 1/2 teaspoon ( 2g ) pepper 1 cup ( 100 ml ) oil 6 dried red chillies A few curry leaves 1 1/2 cup ( 225 ml ) thick coconut milk Method Mix together all the ingredients, except the oil, red chillies, curry leaves and the coconut milk. Allow the mutton to marinate an hour. Heat the oil in a heavy bottomed pan. Add the red chillies and curry leaves and saute for a minute or two, till the chillies give off a strong aroma. Put the marinated mutton and fry it for about 10 minutes. Add the coconut milk and cook on low heat till the mutton is tender. ( If the mutton is a little tough, add 1/2 cup water to the curry and place the mutton curry in a pressure cooker. Cook till tender ). Serve hot with steamed rice. Nutritional value of each serving - 770 kcal Proteins: 27.4 g Fat: 66.2 g Carbohydrates: 15.7 g Golden Fried Prawns ( A wine marinade gives these crispy fried prawns a great flavor ) Serves: 4 Time required: 25 minutes plus marinating time Ingredients 600 g king - sized prawns, deveined, but retain the tails 100 g flour 50 g cornflour 150 ml water 3 g salt 2 g baking powder 750 ml oil for frying 10 ml cooking wine 2 g white pepper powder 5 g sesame oil Method Mix flour, corn flour, water , one gram salt, baking powder and 30 ml oil to make a thick batter. Keep the batter aside for 30 minutes. proteins: 32.9 gShell the prawns, but retain the tails. Mix salt, wine, white pepper and sesame oil, and marinate the prawns in this mixture for 10 minutes. Dip prawns in the batter, deep fry in the hot oil till golden and crispy. Serve with tomato sauce. Nutritional value of each serving- 458.0 kcal Fat: 23.5 g Carbohydrates: 28.3 g How to make a pineapple bowl ? Place pineapple sideways on a chopping board, with leaves pointing away. Using a sharp knife, cut it open. Using a pointed knife, cut pulp all around the edges, about 2 cm away from rind. Carve out the fruit. Take care with the top and leaves section as this area can break easily. Support it underneath with your hand. Finally, use your hands or a large spoon to scoop out the fruit for a cleaner finish.
