
After a day on the boat and sun burnt skin, enjoy a fillet of fresh cod baked with lemon and spices.

Ingredients
2-3 pounds cod fish, fresh or frozen (frozen unthaw before marinating pat dry)
1 teaspoon paprika
1 teaspoons onion powder
1/2 teaspoon garlic powder
1 teaspoon lemon rind
1 teaspoon lemon juice
1 teaspoon sugar
1/4 cup olive oil
1 tablespoon dried parsley
1/2 teaspoon black pepper
Direction
1. Preheat the to oven 350F.
2. In a large reclosable bag or dish; add cod fillets, and remaining ingredients marinate 30 minutes.
3. Transfer to greased shallow baking dish. Place in the oven on bottom rack and bake 4-5 minutes.
Tips:
#1 Check for doneness by flaking with fork; look for translucent appearance in thickest part fish.
# 2 Remember fish will continue cooking a few minutes longer when removed from oven.
#3 When using acidic ingredients such as: oranges, lemons, limes or vinegar the cooking process starts when applied.
