Our first video!

Hello everyone! :)


Hope you all are having a wonderful, relaxing Sunday! I’m so excited to share with you a video that Dutch and I made today. Before posting the video however, I want to take some time to discuss the topic I brought up yesterday on the importance oxygen in our cells. Oxygen is one of the most important elements required in order for humans to sustain life, without it our health begins to suffer. Unhealthy or weak cells due to lack of oxygen eventually lose their natural immunity and then become susceptible to illness and  health problems. One of the best ways to increase oxygen in the blood and out to our cells is exercise. Exercising increases your heart’s capacity to pump more blood into your lungs, enabling more oxygen to be distributed to your tissues. Now I know everyone is busy and fitting exercise into your day can often be difficult, even for us, but exercising on a regular basis is so extremely important for your long term health. That is why we rely on surge training three days a week to not only burn fat but keep our cells oxygenated and healthy. So now that you have worked out its time to eat :) This morning Dutch and I decided on Alfalfas once again for brunch. We  have been doing quite a lot of eating lately but not much cooking. I’m hoping we can get back in the swing of things this week and provide you with plenty of new delicious and healthy recipes soon.


I did attempt to take a few photos at brunch although it was difficult because the light was so bright.


We got free hot beverages because it was so cold right by the window where we sat :) Dutch got herbal tea and I ordered a cup of their signature cinnamon coffee yummm.


For our meals we both ordered the Mediterranean quiche which had tomatoes, olives, feta, and cheddar. Although it was delicious I think I like my quiche custard better, it has a lot more flavor. The one thing I was impressed with was the extremely flaky almost croissant like crust. It was to die for I must learn how to make it!


Alongside our quiche we also ordered a tall stack of blueberry coconut pancakes and homemade raspberry syrup. I seriously think I liked the syrup better than the pancakes it was soooooo delicious! After an enjoyable breakfast we returned home where Dutch headed to church and I got cooking!


Artichoke Hummus


Ingredients:


1 Can Chickpeas drained (2 tbsp liquid reserved)


1 Cup marinated artichokes


2 Cloves garlic


1/2 tsp cumin


1/2 tsp salt


1 lemon juiced


1 tbsp olive oil


Directions: Combine all of the ingredients in a large food processor reserving a few chickpeas for garnish. Process until smooth garnish with a tsp of olive oil and reserved chickpeas.

put ingredients into food processor and give it a whirl. Sorry about the lack of photo before processing I got a little excited to taste and forgot to snap a few pictures!


Finished product= amazing!


This hummus turned out so light and fluffy, just the way I like it. The marinated artichokes gave it a unique flavor I definitely enjoyed maybe a little too much, who says you can’t have hummus for dinner ;)


Alright, I just made myself a cup of blueberry tea and am headed up to my bed for the night to curl up and watch Desperate Housewives i’m  pretty excited!
