Well we finally made it home and so far have been having a blast. Our trip got off to a bit of a rocky start and after 30 minutes in we were stopped at some sketchy gas station outside of Lexington. Apparently something was wrong with the latch on my car and the hood started bouncing as soon as we got on to the highway. So Dutch took it upon himself to “fix” the problem…we definitely got a few stares from the people at the gas station and yes that is his gym bag strap tying the hood down. Needless to say I was nervous the entire ride home. Our delay put us a tad bit behind and our estimated time of arrival went from 1:30 to 2:20 am, not to mention we still hadn’t eaten dinner. Oh the joys of road trips VegiTerranean is a vegan Italian-Mediterranean restaurant located in the heart of Akron. The decor was extremely modern with exposed ceilings and large stainless steel tables which were very sleek and clean looking. The menu had quite a lot of unique, delicious sounding dishes but the squash pizza immediately grabbed my attention and the fact that I could get a gluten free crust sealed the deal. This dish definitely didn’t disappoint. The squash marsala puree was loaded with flavor and the crust was so light and flaky, absolutely delicious! The service was excellent and we had a wonderful time, I can’t wait to go back My mom and I made a pit stop at my favorite market The Mustard Seed on the way home for a little afternoon pick me up When we all got back home we sat outside and enjoyed the beautiful, sunny 60 degree weather while chatting away. We watched OSU beat Texas-SA and got to work on dinner. I fixed a lovely kale salad with blackberries, pears, and toasted almonds. We also baked some salmon and asparagus for a light, healthy dinner! Post dinner consisted of more March Madness and then it was off to bed! I was up early again this morning making green smoothies for my parents and was so excited that they loved them! After green monsters my sister and I took my Aunt to one or our favorite smoothie places in Akron, Robecks! I ordered the junior sized Berry Brilliance without yogurt and a shot of wheat grass on the side. Our smoothies were fabulous as always and we had a fantastic time catching up with my Aunt! We also did a little shopping at the Home Goods store and got back just in time to watch my cats beat WVU! Ooh the revenge was sweet and off to the sweet sixteen we go! Go CATS! My dad and Dutch are currently outside reliving their college baseball days and throwing the ball around haha. I’m off to get ready for church this evening then a relaxing night of cooking and wine with my family. I’ll be back tomorrow with a delicious recipe and hopefully a more normal post!
