Recipe: Couscous with Bits and Pieces
Here is another one of my what can I do with these items. Ingredients - serves 2 1 cup couscous knob of butter 3 cups of boiling water 1 chicken stock cube 1/4 small onion, peeled and diced, or more but mine was strong so 1/4 was enough 1/2 carrot, peeled and diced 6 sundried tomatoes, diced 1/4 tin corned beef, diced (or any other cooked meat) handful of fresh parsley, chopped salt and pepper to season Method - In a saucepan melt the butter and stir fry the couscous until combined. Add the chicken stock cube and the boiling water and simmer, covered, for 10 minutes. Remove the pan from the heat, remove the lid, cover the pan with a clean tea towel, replace the lid and leave to one side for 10 minutes until all the liquid has been absorbed In the meantime dice the onion, carrot, sundried tomatoes and corned beef. Add the diced ingredients and chopped parsley to the couscous and stir well. If you are using a drier meat than corned beef you may need to add a splash of olive oil to moisten the mix. Season with salt and pepper. Serve on its own or with crusty bread. related searches : Recipe
