Recipe: The Alcoholic's Chicken stew
Happy Sunday everyone!
It seems like we're all finally at the last leg of celebrations since Christmas and counting down to the new year 2 nights ago. And not forgetting the fact that we all had the utmost "feastful" week ever! Sick of all the turkey and ham or all that Western cuisines? So much left overs of wine over the festive season and not keen on having anymore takeaways and just want a lazy sunday at home? How about something with a little local flavour, a quick dish to prepare yet so savoury and good that will definitely make everyone help clean out the pot of rice or plain congee you prepare to pair with this dish? :) The Alcoholic's Chicken stew (serves 3-4) Ingredients: Approx. 300g Chicken fillet (diced) 2 Carrots (roll cuts) 3 Potatoes (diced) 1 Onion (sliced) 1 pc Old ginger (remove skin and sliced) 5 pcs Chilli padi/ to taste (sliced or chopped) 1 tbsp Black pepper/ to taste 1 tsp Sugar/ to taste 1 tbsp Chilli Powder 1 tbsp Curry Powder 1 can Ginger Beer 1/2 cup Chinese Hua Tiao Wine ??? 3/4 cup White Wine 2-3 tbsp Olive Oil Method: 1. Marinate diced chicken with chilli powder and curry powder. You may a little sesame oil to enhance the taste. 2. Place marinated chicken on a tray and roast them in the oven (180 deg.c.) for 15 mins. 3. Heat up a pan/pot, add in the oven roasted chicken and deglaze with white wine for about 3 minutes. Remove and set aside the chicken together with the remaining gravy. 4. Add in olive oil, ginger, carrots. Stir fry for a moment before adding in the chicken again together with the chilli padi. 5. Pour in Ginger beer, Chinese Hua Tiao Wine and the remaining seasonings. 6. Stir for 5-10 mins and you are ready to serve. It definitely tasted between the curry chicken we usually had or maybe even the Japanese curry. And i can't believe that i was so skeptical about this dish when my Deserved One was cooking it but yeah, I almost wanted a 2nd helping of rice if not for the mishap with the rice cooker at his place...hehe!
