Refried White Beans
Continuing with the Mexican theme I've been running with this week, I made Refried White Beans for the Clancy's party last Saturday. Mom makes the occasionally with chicken, but they are terrific by themselves. And surprisingly easy to make. It's a 3 ingredient dish, and only takes 20 minutes. It can serve as a main dish, side dish, or dip, depending how much you serve and how much you mash the beans. For Saturday's occasion, I made it a thinner bean, so it could be used as a dip. Delicious.
Refried White Beans Yes, I'm aware that it looks disgusting. Ingredients 1 tsp. canola oil 1 small onion, chopped 1 jalapeño, seeded and chopped 2 cans white beans, drained 3/4 cup salsa (I didn't add because I made the homemade salsa, but it adds an extra kick. I recommend it) 1/4 cheese, if desired Directions 1. Heat oil over medium heat in skillet. Add onion and jalapeño. Cook until soft. 2. Add beans and salsa. Cook, stirring often, until beans begin to soften enough to mash. 3. Transfer to a bowl and mash until desired consistency is reached. related searches : Refried Beans
