Reshmi Kebab
An extra smooth chicken mince kebab made on the skewer Recipe Credit - Indian Recipes - Tandoori Preparation Time: 30 minutes Cooking Time: 6 - 8 minutes Serves: 4 You will need 1 kg chicken mince 60 g / 1/4 cup cashew nuts, pounded 20 g / 4 teaspoons onions, chopped 20 ml / 4 teaspoon cooking oil 20 g / 4 teaspoon coriander leaves, chopped 15 g / 1 tablespoon cumin ( jeera ) powder 5 g / 1 teaspoon white pepper powder 5 g / 1 teaspoon yellow chilli powder 2 eggs 5 g / 1 teaspoon garam masala powder 30 g / 2 tablespoon ginger, finely chopped Oil for basting White butter for brushing Salt to taste Method Whisk the eggs, add cumin, yellow chilli powder, white pepper powder, salt and oil. Add to the mince and mix well. Set aside for 10 minutes. Add pound cashew nuts, ginger, onions, coriander and garam masala powder. Mix well. Divide into 10 equal portions. Wrap two portions along each skewer using wet hands. Keep 2 inches between each portion. Like this prepare five skewers. Roast in a moderately hot tandoor or charcoal grill till golden brown, about 6 minutes or roast in a preheated oven at 300 * F for 8 minutes. Baste once with oil. Remove from skewers and brush with white butter.
