
If you buy rotisserie chicken from the deli, it is delicious the first day. The next day, the chicken meat can be a bit dry. Here's a recipe for the leftover chicken. Shred the chicken into a skillet, add chopped green onions and/or one quarter thinly sliced onions, juice of 1/2 lime, 1/8 tsp of Maggi seasoning, 1/4 tsp ground cumin. Saute for a couple of minutes to heat up the chicken. I did not add any oil to the skillet.

Take flour tortillas and smear fat free refried beans from a can on each half of the tortillas.

Add 2 slices of creamy havarti or any other cheese that you have on hand, avocado slices, taco sauce, and a couple of shots of hot sauce for the adults. Put the on the top flour tortilla. Rub both sides with olive oil and toast in the toaster oven until the edges are golden. Austin, my son, loved it so it will be a rotation in the weekly dinners from now on.
