1 kg Belgian Endives
1 onion
4 small patatoes
15 gr celery
25 gr carrots
2 table spoons sugar
1 L beef bouillon
butter
Preparation:
place some butter in a pan
cut the onion, carrot, celery and patatoes in little pieces
saute the onion
add the patatoes, celery and carrot
cut the Belgian endives in pieces
add them to the rest of the vegetables
poor the bouillon in with it
cook it for about 45 minutes
add the salt and pepper
add the sugar
blend the soup when it's cooked
Tip: before you add the sugar, taste if you need to add sugar.
This depends of the taste of the Belgian Endive.
If it taste bitter then you need to add some sugar.
