Wax Paper is NOT the same as Parchment paper *smacks forehead*
I walked around the entire Charlotte Regional Farmers market searching for apricots....only to find out, they are not a regional fruit. (for regional Charlotte, NC fall produce click here). But Baxter Farms, had the most delicious peaches last week, so I bought 2 buckets and another of their nectarines. The decision was made that a Nectarine Gallette was going to be made tonight. What is a gallette? good question. I had to google the exact term, but in a nutshell, it is a rich, flaky pastry, usually rounded and flat, and super crusty. That leaves a lot of room for negotiation.
My recipe uses packaged puff pastry....Wasn't one of the top chef's concerned about getting cut for using package puff pastry? Apparently, homemade puff pastry is tedious and not much different than the frozen one. (That is a comment that I won't use much). Now that I have justified my laziness, on to the warning. WAX PAPER IS NOT PARCHMENT PAPER. Sorry for yelling. But not to worry, I have a silpat in the mail, ready to be reviewed next week. What is a silpat? stay tuned for the answer to that one. My prep The recipe was easy, simple, and the end product was very tasty....After I managed to pull the melted wax paper off the bottom. I will definitely be making this one again.
