Chicken Lettuce Wraps!
You can never have too many recipes for this particular goodness, but I must admit, this is my FAVORITE recipe for these to date!
~Ingredients 1 Tablespoon Rice Vinegar 1 Tablespoon Brown Sugar 1?4 teaspoons Ground black Pepper 1?4 teaspoons Ground Ginger [powdered] 1 TB Sesame Oil 2-1?2 TB Soy Sauce 2 Tablespoons Canola Oil (I used extra light Olive Oil) --for stir frying 3 Chicken Breasts (approx. 3/4 Lb. Total), Diced into 1/2 inch cubes [try for smaller than an inch] 1 cup Diced Green Onion [about 4 whole green onions, white tip to end of green] 2 cloves Garlic, Minced 1?2 cup carrot, cut into skinny straws 8 leaves Of Greenleaf, Bib, Or Iceburg Lettuce, Washed And Dried Prep Time 15 Minutes Cook Time 15 Minutes Servings 3 Difficulty Easy ~Instructions For stir fry sauce, mix together rice vinegar, brown sugar, ground pepper, ground ginger, sesame oil, and 2 tablespoons of soy sauce, making sure to dissolve brown sugar [I heated it all for about 30 seconds in microwave to be sure]. Set aside. Heat oil in pan over medium to medium-high heat. Add diced chicken and brown (about 4 minutes). Remove chicken from oil. Add onions, carrots, and garlic to pan; brown about 1-2 minutes. When onions and garlic are brown and tender, add stir fry sauce, and browned chicken. Saute mixture for a few minutes and remove from heat. Spoon chicken mixture into individual lettuce leaves. I added some crunchy Chow Mein noodles to each roll up, for a bit of crunch--SOOOOO Delicious!!
