Dover Sole with Lemon Butter Sauce
The other day Rene and I were shopping at Costco (ahhh I love Costco) while in the meat section we passed by fish and Rene said "You never make fish, lets get some" me "OK put it in the cart".
Last night I made the fish, Rene picked out none the less, and he didn't like it, well this is why I don't make fish. He never eats it. But I liked it, I ate mine and the proceeded to eat his, can't let it go to waste right?! Let's get to it: Here's what you'll need: 4 fillets of Dover Sole...or any white fish you prefer 2 eggs, beaten 1 cup dry bread crumbs 1 quart vegetable oil for frying 1/2 cup butter 2 tbsp minced garlic 3/4 cup chicken broth* 1/4 lemon juice 2 tbsp cornstarch salt and pepper to taste What you'll do: ~In a small saucepan, add butter, garlic, chicken broth, lemon juice, salt and pepper and bring to a boil. ~Add cornstarch and stir, stir, stir, which will no give you a nice thicker sauce. ~Remove from heat and pour butter sauce over fish fillets. ~Bake in oven on 350 for 20 minutes ~Serve and enjoy *If you have white wine on hand use 1/2 cup chicken broth and 1/4 white wine, YUM!! ** If you'd like to fry your fish, take 2 beaten eggs, and dish fish in egg, then breadcrumbs and fry, once sauce is made, pour sauce over fried fish and serve
