Grilled Lemon Chicken Pasta

By Kaitlin in the Kitchen (Visit website)

Happy St. Patrick's Day! I honestly don't think I've ever celebrated this holiday EVER. What do you do anyway? Eat corned beef, cabbage, and drink? I think my mom is part Irish, I think...are you mom? Hmm. Well, I don't like corned beef unless it's in a can in the form of hash, in that case..mmm yummy! I know it probably looks like dog food to a lot of people, but I grew up on it and love it. I don't like cabbage at all, and I'm not a huge drinker. Only a couple times, like once, a year will I DRINK. Other than that it's just a few here and there, and trust me, with me, that's usually all it takes! Anyway anyway, holy criz-ap..I made the best pasta last night for dinner! Well, I can't fully take credit, or wait..can I? I was going to say my hubby cooked the chicken on the grill but I probably took care of that 90% of the time too. Thanks for the 10% though babe! It was so so good! I just love lemon with grilled chicken and pasta. You gotsta try this!!

Ingredients:
1 Boneless Skinless Chicken Breast (we only needed 1 because it was HUGE, biggest I've seen)
8 Oz. Farfalle Pasta, uncooked
1 Medium Lemon
1/4 Cup Fat Free Italian Dressing
1/2 Cup Parmesan Cheese, grated
4 Tablespoons Butter
2 Garlic Cloves, minced
Salt & Pepper, to taste

Directions:
Place chicken in a bowl season with salt & pepper, italian dressing, and half the juice of your lemon; set aside and let marinate for 10 minutes. In a large pot, start boiling your water for your pasta. While you're waiting for your water to boil, heat your grill up and start grilling your chicken. Once your water has come to a boil add your pasta and cook to al dante. By the time your pasta is done, your chicken should be cooked through. In a saucepan add butter, garlic, parmesan, the juice from the other half of the lemon, salt, and pepper. Drain your pasta and place it bake into the pot you boiled it in. Pour the sauce mixture over it and stir until everything is evenly coated. Take your piece of chicken, and just like you would butterfly it, do that, but don't leave it connected, slice it all the way through. Then take each of those half's and slice into thin strips. Spoon pasta on plates and lay chicken evenly over pasta then sprinkle with parmesan cheese.
