Ingredients:
4 Tbsp. Olive Oil
10 Shrimp
10 Cloves of Garlic
Pinch of Crushed Red Pepper
Salt and Pepper to Taste
½ c. White Wine
2 Tbsp. Chopped Parsley
2 Roman Tomatoes
½ lemon
1 Tbsp. Smart Balance
2 pkgs. of Shiritake Noodles

Preparation:
Take your pan, and pour the olive oil in. Place on medium-high heat. Once its hot, put in the shrimp. Leave shrimp in for a minute, then put the garlic, crushed red pepper, salt and pepper in. Give it a good stir. Flip the shrimp. Then, pour in the wine. Turn up heat to let the wine reduce. It will take about 2 minutes. Once reduced, put in ½ of the parsley, all the tomatoes, and squeeze the juice from lemon. Give it another good stir. Take off heat. When the sizzling has stopped, add the Smart Balance. Allow the butter to melt in with the sauce. Finally, add the noodles and the remainder of the parsley. Top with Parmesan Cheese
