Oatmeal Chip Cookies and Miqu's Scary Contraption

By Kitchen 37B (Visit website)

I was thinking I might want to watch a movie. The Proposal. I haven't seen a movie in ages. But then I thought of all the other things I could buy with the cost of the movie. And so then I decided I would spend the money on something else, and wait until the movie comes out on DVD, possibly after I have heard all the stories about it. I know I will later regret having put the movie off... but I know that if I did go a watch it... that I would regret that too. So - bah!

I was walking down Lambton Quay the other day. Minding my own business, trying to keep warm, when I took a slight slip. Just a slip. Like - whoo! Not, whoa! or Aaaaggghh!! Just a slip. My stupid heel - that rubber part that keeps you grounded? That dang part came off! So I was walking on the screw of the heel. It was making this annoyingly loug TAP TAP noise. Like the kind with tap-dancing shoes. (I wonder if people still tap dance?!) But anyway, so I was walking with one good heel, and one bad one. Plock TAP Plock TAP Plock TAP. That's how it sounded. I swear! Grrrrr. It's gone now. I have added the pair of shoes into the pink give-to-charity bag, with all the little clothes my girls have outgrown.

The cold has been fierce over the last few days. I went wandering around the house last night, trying to find a warm place. My tears were nearing, when finally I told my husband: I'm cold! He finally took me to bed... put socks on myfeet, (His socks, because he has the sporty kind, while I have the useless thin, ankle type ones.), got me another sweater to put over the one I already had one, and lay 3 blankets over my weary body. I know it's a bit st*p*d to wander about, because, really... what could that do? But that's just how cold I was. I didn't know what to do! It's probably just as well that there are no homeless people in Wellington... the cold is too fierce for one to be homeless.

Miqu has been placed on anti-asthma medication. Whatever that means. All I know is that it involves this scary contraption, that I have to put together, and spray it into her mouth twice a day. Poor little Miq fights with all the fight in her. She's had this eternal cold, which wouldn't go away with antibiotics. The doctors finally said that it was not an infection, but more an allergy. Weelllll... at least it's just an allergy. I have to remind myself. She's kinda good about the scary contraption these days. She stiffens when she sees it. But at least she's started to let me put the gadget over her mouth and keep it on for some 10 seconds.

I have been having these cravings for cookies. Not the big, fat cookies - like I normally like them. Lately, I've been looking for the small, dainty ones. Crisp on the outside and chewy inside. I haven't really ever baked a batch that I would call the BEST. Not yet. I am still searching.

But these little pretties...? Mmmmmm... crisp on the outside, and chewy inside. Just the way I like it... :) It's ok that I didn't get to watch that movie. Because, in this weather? I'd much rather be in bed - under 3 blankets, 2 sweaters, jammies, and thick, sporty socks - with a good read and a plate of yummy oatmeal cookies (with chocolate chips, of course. It's just not me without the chocolate chips!)

Oatmeal Chip Cookies

77g AP Flour
1g Baking Soda
1g Salt
112g Butter, Softened
110g Brown Sugar
50g White Sugar
1 Large Egg
5ml Vanilla Extract
120g Instant Oats
170g Semi-sweet or Dark Chocolate Chips

Preheat the oven to 150 degrees C and line a cookie sheet with baking paper.

In a small bowl, combine the flour, baking soda, and salt. Set aside

In abother bowl, using an electric mixer, cream the butter and sugars until smooth, at medium speed for about a minute. Beat in the egg and vanilla for another minute.

Beating at low speed, add the flour mixture, until just combined. Fold in the oats and the chocolate chips.

Cover with clear wrap and chill the cookie dough in the freezer for 10-minutes.

Using a teaspoon, drop half a teaspoon of the cookie dough onto the baking sheets. Really - just half a teaspoon, if you want to keep them little. Keep them an inch apart to make room for spreading. Bake each batch for 12-14 minutes, just until the cookies start to brown slightly. Do not overbake them, or they won't be chewy. Leave the cookies to cool on the baking sheet for 5-minutes, before moving them to a cookie rack or straight to an airtight container.
