Ingredients

• 1 cup unsalted butter
• 3/4 cup granulated sugar
• 3/4 cup brown sugar
• 2 eggs
• 1 teaspoon pure vanilla extract
• 1 1/2 cups flour
• 1/2 teaspoon salt
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1/4 teaspoon cardamom
• 3 cups rolled oats
• 1 cup dried fruit (in this case dragon fruit)

Preparation

• Preheat oven to 350°. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients.
• Add to butter mixture and stir until well blended. Add dried fruit. Drop by teaspoonful onto parchment covered baking sheet.
• Bake about 10 to 12 minutes, or until lightly golden. Cool.
