Recipe 53: Peanut Butter Cookies
Let me begin by confessing: I love peanut butter. I've been known to eat it straight out of the jar on a spoon (or knife) and put it on almost anything. There were times when I didn't even buy peanut butter because it would just get me in trouble. That being said, left BC's peanut butter cookies to be the last cookie I had to make. (Yay! I finished the cookie chapter!) I have 2 half-eaten jars of peanut butter in my pantry, so I put the less desirable one to use. Don't get me wrong, it isn't awful, but Roundy's doesn't make a very good natural peanut butter. It's very runny.
So I mixed the sugars and butters together, added the egg and then the dry ingredients. I prepped the batter a bit early, and probably should have put then in the fridge to chill while I finished making the oatmeal cookies, but oh well. I was still able to form balls then criss-cross and sugar them. The baking time was set at 9-10 minutes. 10 minutes burned the bottom a bit. 9 minutes almost burned the bottom. But 8 minutes was perfect. However, if these were the only cookies I was making and the oven hadn't been heating for 2 hours, the additional minutes probably wouldn't have been a problem. The cookies were amazing, I ate 5 (whoops!). A bit crunchy, maybe use a bit more brown sugar, and less granulated sugar, next time.
