Recipe for Curry powder (North Indian Style Pickles)

Pickles can be made easily at home. The only main ingredient you have to have at home is the basic curry powder / pickle powder mix at hand.  I am giving you a basic recipe for the Pickle Mix, you can get about half a kilo powder by this recipe. Make it and then store in an airtight container.



Ingredients you will need for the Pickle Mix

2 cups of red chillies ( long variety and nicely coloured ) tightly packed cups

2 tbsp - Kalonji / Onion Seeds

4 tbsp Methi / fenugreek seeds

2 tbsp Jeera / cumin seeds

2 tbsp whole pepper

8 tbsp Amchur / Dry Mango powder

2 tsp - turmeric powder



How to choose the ingredients:

Red chillies should be of the long variety and bright coloured.  The cups you use should be tightly packed with chillies. If you like the pickles hot and spicy you can add a little more and lessen the amount if you do not.

You can get the rest of the ingredients in any of the Grocery shops or the big supermarkets where they sell Indian provisions.



How to prepare the Pickle powder:

You can dry all the ingredients in the sun if you are in the tropical climate area. If you are not just microwave for a minute or two till the ingredients are warm to touch.

In a Mixer Grinder, put in all the ingredients and grind them into a fine powder.

Cool and then store in airtight container.



Using the Pickle powder

You can use them whenever you feel like making a pickle. This powder can be stored for months together.  But be careful that you put only a dry spoon in to the container, to take out some powder.

While making the Pickle you can add the powder with the other seasoning ingredients, mix well. That's all , your pickle will be ready in a jiffy.
