Recipe: Mashed Potatoes

Mashed potatoes have always been listed under my comfort food.
Sometimes, don't you just crave for some piping hot mashed potatoes after a terrible day at work or school or when you're trying to fight the Monday Blues?

But the mashed potatoes that you can grab outside are normally topped with the savoury but super duper fattening gravy. Like as if potatoes are not high in carbohydrates enough? haha...And you'll probably feel that you've let yourself down if you request for your mashed potatoes without the gravy, such a dilemma right?

So I've decided to share a simple and quick recipe to fix up your own mashed potatoes at home to coax the crave...Yes, i'm having mashed potatoes at home as much as i can from now on! :D

Mashed Potato (makes 1 person portion)
Ingredients:
1 Russet Potato (sliced or diced)
1 cube (approx. 2x2x2 cm) of butter
½ cup Fresh Milk
1 pinch chopped Parsley
1 pinch Salt (or to taste)
1 pinch Pepper (or to taste)

Method:
1. Boil potatoes till cook and drain water. Use testing pin/ cake tester to poke in to test if the pin goes in smoothly or not. If not, reboil potato till the testing pin can be pierced through smoothly.

2. At the same time while waiting for the potato to be cook, pour fresh milk into a small pot and bring it to boil. Once boil, bring it to simmer and add 1 cube of butter in to melt. Once butter melt, turn off fire and let it rest.
3. Using a mixing bowl, smash the boiled potato with a potato masher (or puree maker to ensure fine texture).

4. Stir butter and fresh milk mix slowly into the mashed potato.

5. Continue stirring mashed potato and add in salt and pepper to taste.

6. Garnished with parsley and it's ready to serve.

Note: Alternatively, you can replace parsley with other herbs or powdered nutmeg.
